With real experience in a Japanese kitchen. Not “I watched a ramen video,” not “I once worked near a sushi bar.” Actual time on a Japanese station – prep, grill, cold section, whatever you ran, you know the ingredients and you respect them.
You show up on time. You keep your station clean without being told twice. You take the work seriously and yourself not at all. You want to get better, and you’re not too proud to be corrected. In my kitchen nobody gets shouted down for asking a question – but everybody gets held to the same standard.
What I’m offering back: a kitchen that’s organised, a team that talks straight, and a chef who’ll teach you if you’re willing to learn.
